It's surely easier to go to the bakery to buy your own bun, because it takes close to three hours to make your own. But if you enjoy baking, then here's the steps to take to make your own Wholemeal Red Bean Buns. Nevertheless, if you feel like making your own, feel free to follow our steps.

Wholemeal Red Bean Buns Recipe

Cooking time: 3 hours Serving size: 3 persons

Ingredients

  1. App. 375g Bread Flour
  2. App. 50g Wholemeal Flour
  3. 1 box of 200ml Milk
  4. App. 1 teaspoon Yeast
  5. App. 25g Sugar
  6. 1/4 teaspoon Salt
  7. 1 Egg
  8. 20g Butter
  9. 1 tablespoon chocolate powder
  10. 1 tablespoon black sesame (for sprinkling only)
  11. 270g Red Bean Paste

Most items above are unmeasured and cooked using the half-eye-closed method, meaning we just work on estimation, except that the dough (which is the total weigh of the ingredient except the black sesame and red bean paste) was 600g. We only know this amount after we have put all the ingredients together, but having made buns so many times, we knew we couldn't go wrong regardless the total weight of our dough.

We don't refer to any written recipes, so we are now writing down based on what we remember of the steps. We don't even measure most of the stuff. The bread flour, we just estimate from the packet. I think we used about 300-350g and an estimation of 50g of wholemeal flour. As for the yeast, to be honest, we used whatever's left, which was maybe one teaspoon.

We put them all the ingredients into our breadmaker. We add water according to eyeball judgement. After the dough is done, let it rest until double in size. After proofing, the dough weighed about 600g. Form into 9 balls.

Separately, form the red bean paste also into 9 balls, weigh them to be around 30g each. Flatten the dough, then wrap each red bean paste ball into them, then arrange them neatly in your baking tray. As ours is rectangular, they are three in a row, in three rows. Proof again, until double in size, approximately an hour.

Beat 1 egg (yolk and white) and use it to brush the top of the dough. Then sprinkle black sesame over it. Bake in the oven 175°C for around 25 minutes or until the buns are brown. The buns are done. Once cooled, they are ready to be enjoyed.
