Wholemeal Roti Benggali is a variation of the regular Roti Benggali. Since we make it using wholemeal flour, the result is a beige-colour bread, as oppose the usual white bread. The Wholemeal Roti Benggali is fantastic when eaten with kaya.

The photographs you see here is the Wholemeal Roti Benggali which we made at home yesterday morning. Yes, we use a breadmaker to knead the dough for us. We wouldn't be bothered to hand knead the dough. This allows us time to also make our own kaya to go with it. Making your own bread is not something to consider if you don't have time. Total making time for this Wholemeal Roti Benggali is 2 hours, and that's just with one time proofing. This bread was shared between my wife and I, eaten with our own homemade kaya.

Roti Benggali Recipe

Prep Time: 35 minutes
Baking Time: 30 minutes (steaming)
Total Time: 2 hours, including preparations, kneading and baking
Yield: 1 loaf

Ingredients

  1. 390g bread flour
  2. 60g wholemeal flour
  3. 300ml milk
  4. 30g butter
  5. 1 teaspoon yeast
  6. 30g sugar
  7. 3/4 teaspoon salt

Utensils & Equipment

  1. Breadmaker
  2. Oven
  3. Bread Mould

Steps

  1. Put the milk, sugar, salt in a breadmaker.
  2. Top with bread flour and wholemeal flour.
  3. Add in the yeast.
  4. Let the breadmaker knead until dough is formed, then add in butter.
  5. Let the machine continue to knead for between 30-45 minutes.
  6. Take the dough out, and form the shape you want according to your bread mould.
  7. Let dough proof until it expands to twice its size. This will take about 1 hour.
  8. Heat oven at 180°C.
  9. Bake until done. Duration depends on type of bread. Watch the dough as it bakes into a Roti Benggali. Once you see that the bread is brown, take it out of the oven.
  10. Rest your bread for 5 minutes before removing it from the mould.
